Favorite healthy meals to make on the grill?
As soon as the warm weather hits, we grill alllll the time. For the past few summers it's been burgers, sausages, hot dogs, etc. but this year we are trying to eat healthier as we've both packed on a few pounds.
Any creative/unique ideas for healthy grilling? (besides turkey burgers, light hot dogs, and the other usual suspects )
Any good marinades for grilled chicken breast?
Sides?

I marinate chicken in a little vegetable oil, chopped garlic, dash of hot sauce, cumin, salt, pepper, and lemon juice. YUM

that sounds so good!!!
I marinate it in white wine and italian dressing
Slice some eggplant 1/4 inch thick, brush with olive oil and garlic. Then I spray some balsamic vinegar on and grill..so yummy. You could add more vinegar but my DH doesn't care for it to much.
Not everyone likes this but we love to grill a whole fish like red snapper. Tastes so much better than any other fillet you will get. We brush it with olive oil, garlic and parsley.
cedar plank salmon with a brown sugar and black pepper rub.

Swordfish, peppers & onions, tblsp of olive oil in an aluminum foil pouch. So good.
I also like to make a glaze for chicken or salmon of cajun spices mixed with pineapple juice to make it like a paste, spread it on and grill it! Super simple and it tastes great.

YAY for summer!
I marinate chicken in Soy, ginger, garlic a little lemon juice and pepper. Sometimes I do a little lemon, olive oil and fresh thyme. Delicious on the grill or in the broiler. BE WARNED - the lemon marinade 'cooks' the chicken and can dry it if you let it sit for too long.
You can also brush shrimp with a mixture of minced garlic, lime juice, olive oil, salt and crushed red pepper and grill it on a skewer.
For a quick friday we do a firmer white fish (I like Bass - sea or striped) and put lime slices on it, a little pepper and a shake of powdered Adobo seasoning. Wrap it up in foil and throw that bad boy on the grill.
We also do a lot of salads in the summer - so we can do a smaller amount of meat (burger or steak) and fill up on the salad. Our favorites are thin sliced cucumber with diced red onion, salt, pepper, a little red wine vinegar and a splash of olive oil - and fresh tomatoes, crushed mint leaves, red onions, salt, pepper and lemon juice with a drop of olive oil. A little fattier - but fantastic with grilled fish tacos - is avocado salad (avocados, tomatoes or tomatillos, onion, lime juice, cilantro, salt, pepper, cumin). Corn Salad is another big hit with the kids (grilled corn (chilled), diced tomatoes, onion, vinegar, olive oil).

shrimp - any fish really veggie and tofu cabobs (sp?) portabelllo mushrooms (put 'em in a burger bun with all the fixings!) I like to also cut up veggies in chunks, like eggplant, squash, zucchini, etc.. put them on tinfoil and drizzle with olive oil or grapeseed oil, then seal the tinfoil and put the veggie pack on the grill. then i make those grands biscuits in the toaster oven. when the veggies are done, i serve them on the biscuits, open face. yum!

My parents grill salmon, wrapped in aluminum foil....so good!
ed: and I love grilled mushrooms! You either need to get larger ones and grill them whole, or get a grilling tray so they dont fall through the slots.
I also grill onions (my fave!) asparagus red and green peppers zucchini
and CORN! Soak the corn, in the husks, in water (so the husks dont burn) and then grill
found this too - grilled eggplant, tomato and goat cheese
