Corn salad
I use white and yellow corn. Diced red onion, green, red peppers, chopped cilantro, black beans. I usually toss it a dressing made with: lime, evoo, lil sugar, 2 chopped garlic cloves, garlic powder, salt and pepper

My favorite is the following and people always ask me for the recipe. I usually serve it with Tostitos Lime as a app but I have also ate it as a side and it's still just as good.
2 cans of black beans- drained and rinsed
2 cans of white shoepeg corn- drained and rinsed
5 chopped garlic cloves
3 plum tomatoes diced
1/2 or 1 red onion chopped up
2 teaspoons of sugar
salt and pepper
2 tablespoons cumin powder
2-3 limes juiced
Mix it all together and that's it. I usually make it a couple of hours a head to let it all marinate

Corn salad
OK, I've been craving corn for the longest time and now you guys have just sent me over the edge, I'm getting SOMETHING corn salad today!

Corn ( usually fresh but frozen will do in a pinch), halved grape tomatoes, red onion and diced avocado. I just dress it with lime juice and salt. After you let it sit for a while the lime and avocado make a yummy creamy dressing.
It's also really yummy on top of a grilled chicken or steak sandwich.

I do these ingredients, but I don't add sugar. But do add 1/2ed cherry tomatoes and cubed avocado.
