Cold lentil salad recipes?
I had one at a cocktail hour and now I'm craving it! I bought cooked lentils at Trader Joe's and looking for a good recipe. Any ideas?

Mix with cooked rice, diced onion, red pepper, carrot, fresh parsley, and your favorite vinaigrette.
Add any other vegetable and herb you like.

I use the TJ lentils to make an amazing dip. Just add bruschetta and feta cheese. It's delicious
