Roasted chicken WITH vegetables

I want to save some time and cook some vegetables in the pan while roasting a chicken.

Can I just wash and chop and put them in the pan (with o/o, s&P, maybe a bit of broth)?

Or is there an extra step I should take?

You sure can!

I often toss a mix of root vegetables in olive oil & S&P and arrange them in a layer around the chicken.

You can also put the chicken on top of the veggies while roasting. Potatoes especially come out delicious this way!

Any particular veggies? I was thinking potatoes, yams, carrots, parsnip/turnip, brussel sprouts.

And do I put them in from the start or do I let the chicken cook first for a bit?

We use carrots, potatoes, onions.

We usually roast the veggies on a separate pan and put them in from the beginning, because we like them very roasted. If you don't like them as roasted I would keep in the same pan as the chicken so they would be in more liquid.

ETA: I'm thinking the brussel sprouts will cook faster then the rest, so I'd probably put them in halfway thru instead of from the start. The other veggies are much harder and will take a longer time.

DH put a whole container of chicken broth in (I suggested just a splash) and so after removing much, we didn't have roasted veggies but they were still delicious. Wound up doing carrots, potatoes, yams, brussel sprouts, and mushrooms.
