Leafy greens?

I want to incorporate more and different leafy greens into my diet. I usually stick to spinach, brocolli rabe, broccolini. What is your favorite and how do you prepare it?

Leafy greens?

Spinach is my favorite, but I mix in kale in things. Spinach salads or sautéed with garlic and oil.

We have been in a 1200 calorie per day diet for about a year. So I'm always making low calorie but filling dinners
I stir fry kale, cabbage, bok choy a lot.
I usually start out with onion and garlic add boneless chicken cubes or strips ( or tofu) in coconut oil, add spices when the chicken is done I remove it but leave most of the onions then I add copped greens with a little water. When it's cooked I out the chicken back in for a couple of minutes. Sometimes I will use low sodium chicken broth instead if water.
I really enjoy all of these greens and I find them to be filling.

My fav is red swiss chard sautéed in evoo, a lot of garlic, s &p and red chili flake! I make 2 bunches. It shrinks and the kids love it.

Wow! For a whole year. How did you do on the holidays?? If you don't mind me asking; How much weight was lost from this or is this just for relative healthy eating?

Kale is great. You can use it in a salad (kale caesar salad is great!) or chop it up and saute it. I mixed some in a meatloaf last week that was yummy.

Shaved Brussels sprouts in spices, garlic and olive oil are great.
Roasted Brussels sprouts as a side or in a salad.
Sautéed kale...sautéed cabbage...cole slaw with very little mayo...

yea, I think I need to get on this kale thing! Do you keep the vein in? Is it tough? Swiss chard- is it bitter at all? I also want to try to make escarole and beans. I feel like it will be a filling, but healthy option for a side or even light dinner/lunch. I do love brussel sprouts, I need to try them shaved! I also just made a mayo-less cole slaw. Has some sugar in the dressing but I feel it's a good trade off to not have the heavy mayo.

We are actually on isagenix so 600 calories per day is isagenix products( shakes, bars) and snacks and 400-600 calories is one regular meal. I lost 30 lbs, DH lost 50. We went over our calories a few times during the holidays but neither of us gained much. It's very easy to get back on track. We really love finding things to cook that fit into the calorie allowance but are tasty and filling. Technically my DH is on maintanence now, I still want to loose 10-15 more. I don't exercise regularly except walking, I know adding exercise will get me there.

Sort of related, I often make pulled buffalo chicken sandwiches and do a blue cheese slaw to put on top- regular cole slaw mix with fat free blue cheese dressing. Super yummy.

I like spinach and broccoli rabe best....honestly, I can't get into kale.

escarole--I will make an escarole, sausage and white bean soup or you can sautee it with white beans by itself

I like kale. baked in the oven to make kale chips. i like it fresh in salads and cooked in soups.

I also like bok choy. i usually stirfry it or add it to soups.

i occasionally do fresh spinach in a salad.

I like cabbage raw.

I do a lot of broccoli. microwaved with lemon and garlic, or steamed, or raw with dip, or roasted in the oven.

most dark leafy greens are good in salads or sauteed or thrown in soups!

Earthbound farms has a power mix that's spinach, chard, and kale for an easy salad mix. You could easily saute them for pasta or other dishes too. I usually buy the big clamshell of baby spinach and toss whatever I won't use in a ziploc for the freezer. I add that to smoothies or eggs whenever I make them. You could do the same with kale. I actually saw juicing and smoothie mixes at target the other day with different greens. They looked interesting.

Besides what you listed, I also eat a lot of Kale & Brussel Sprouts.
Sorry forgot to add the prepare it part! Kale I Steam and Brussels I roast.
