baked ziti
Just a suggestion when you make it. Make it in smaller portions so that it can be frozen easily. Someone made me a huge try (which was great) but didn't need that much food at once and it would def have been easier in smaller trays.

baked ziti
Boil noodles till slightly cooked drain and put to the side
If you like with meat then ground up your beef/pork/veal combo or sausage
I take ricotta add to bowl, 1 egg, parmesan cheese, mozzarella cheese, chopped fresh parsley, oregano, thyme, chopped garlic and mix (add browned meat if using).
I then add my sauce to it and combine with noodles- top with more mozz and bake till bubbly.

I do the same but layer it. First sauce, noodles, ricotta and mozzerella, repeat.

Re: baked ziti
Layer!!!!! Never toss your sauce with the cheese mixture. I think that's icky and you end up with pink pasta and the ricotta kind of disappears. I layer sauce, then pasta, then globs of my ricotta/mozzarella mixture, more sauce, pasta, etc. etc. I add shredded mozzarella on top for extra cheesy yumminess. It's outrageously delish!!!
ETA - I don't follow any recipe, I just make my sauce, make the ricotta/mozzarella mixture with an egg, parsley, S&P, and Pecorino Romano and then I just layer it all and bake until browned and bubbly, usually 45-60 min at 350 degrees.

that's how I did it this time, usually I mix the cheese with the noodles, this time I tossed it slightly it was soooo much better.

I'm going to have to try this next time. I've always mixed. Sounds so good this way!

Layering is for lasagna!
I always do it the combining way and get raves from people who are used to the other way. Much more creamy goodness!
I think it all matters how you like to eat your pasta...for me it's loaded with ricotta and less of a marinara sauce taste.

I totally agree. I'm 100% Italian and everyone in my family, going back generations, layers their baked ziti. You get awesome bites of ricotta and mozzarella that way. I actually cube my mozzarella in the cheese mixture, I don't shred it. I don't want a creamy pasta, when I eat baked ziti I want delicious huge bites of cheese. Layering accomplishes that.
ETA - It really comes down to preferance. I don't like when the ricotta is mixed up in the sauce and pasta which is why I layer.

Re: baked ziti
I also layer, I don't like to mix it up altogether, I don't think it tastes the same
