Baked Chicken and Veggies
Lately, I have been obsessed with this chicken thing I put together. Just wanted to share
4 Boneless, Skinless Chicken Thighs
4 Drum Sticks
3 White Potatoes Cubed
Fresh String Beans
Fresh Spinach
Baby Carrots
1 Large Onion Cubed
1 Can of Diced Tomatoes
1 Can of Artichoke Hearts w/Out juice (I cut them in half)
4 Cloves of garlic chopped
Olive Oil
S&P
Oregano
Fresh Parsley
Fresh Squeezed Lemon Juice
I put it all into a big roasting pan
Mix it up. Bake @ 350 covered 1 hour, then uncovered for 30 minutes.
It is so good. I have made it every week for the past 3 weeks.

That sounds really yummy.... do you think it would work with chicken breasts (not a fan of dark meat)?

Yes totally. Im more of a breast meat person but DH loves dark. Being that I do t eat that much meat, I just make what he likes.
