Meals this week

What are you making?

My meal planning has been off routine due to many factors. This week I want to use what I have, easy/quick to make and balanced/healthy. Has to please me and my DDs.

I have in the freezer ground turkey, italian sauasage, chicken breast, edamame

Fresh veggies carrots, caulifower, cabbage, celery, romaine, cucumber, 2 tomatoes , spinach

Pantry has pasta, quinoa, rice, barley, refried beans, diced tomatoes, black beans, jarred pasta sauce

Yes still haven't gotten to the store! We used the spinach and caulifower already Chat Icon

We had taco salads. You could use ground turkey, lettuce, tomatoes, black beans. We also did mexican pizzas with refried beans, meat, cheese, lettuce, and tomato.

You could do a chicken stir fry with carrots and edemame over rice. Or a chicken and rice soup with celery and carrots. I like to parboil and then saute italian sausage on the stove top. Maybe do a cold quinoa salad on the side with tomato, cucumber, carrots, etc. A little heavier but you can also cook and dice the sausage and add to pasta with the jarred sauce.

Salad with cucumber, tomatoes and romaine
Rice w/ stewed chicken (since you have diced tomatoes)

Other options, barley and bean soup, pasta w/ spinach and sausage, and also perhaps a quinoa salad.

I love to throw stuff together on paper, only if I could raid
pantry and put stuff together my wallet would be happier :)

You can make ST riceball casserole with the ground turkey, sausage, pasta sauce

you can make a pasta primavera with your veggies

you can make a chicken fajita (without the fajita) with the chicken, black beans or refried beans and rice

quinoa salad with all the veggies

Stuffed cabbage with the ground turkey and rice

you can make stuffed tomatoes with the ground turkey, sauasage mixed with shredded carrots, finally chopped celery.

side dish black bean/cucumber, diced tomato salad tossed with oil, balsamic vinegar, salt and pepper.
