Gestational diabetes lunch ideas
I'm in desperate need of gestational diabetes lunch ideas. The nutritionist I'm seeing (saw her once so far) recommended that I eat a grilled chicken wrap but it's hard to prepare that while I'm working. Even though the chicken is cooked I think I would still have to reheat it. What is something quick that I can eat for lunch at work.

Tuna salad or chicken salad or cold cuts or PB on whole wheat sandwich thin or english muffin.

If you ever get lunch out, you can look up carb counts of national chains like Panera before you go to help you make decisions.

I did a lot of grilled or baked chicken seasoned with garlic, salt and pepper and a veggie. I would prep on Sunday and eat it all week. Or I would do a lot of salads and fruit.
Once you get the hang of it, it becomes easy.
I was told by my nutritionist (this was 5yrs ago when I was pregnant with my first and had GD) that I could have 3 servings of carbs per meals. 1 serving = 15g of carbs so no more than 45g of carbs per meal.

For diabetics, "carbs" aren't all the same. The Glycemic Index is a huge factor. Fruit will make your blood sugar spike quickly, while milk cabs (lactose) takes much longer to raise your blood sugar. For me, as a diabetic, I drink Muscle Milk for lunch. Nothing to do with creating muscles, but it's got a lot of protein, so it's filling, minimal sugar, and it's very consistent, so it makes it easy for me to manage it on a daily basis. Some people get bored with the same thing every day, but it doesn't bother me. Plus, I'm very lazy, so a shelf-stable (although it tastes better chilled) container is my favorite way to go...

I would eat a big salad, 1/2 of a sandwich on 5 grain bread, cheese, pirate booty (small bags-15g) and a yogurt (15g). It was a pain at first but I got used to it
