I always do olive oil but my dad said to use vegetable oil. Something about the heat shouldn't be that high....reduces the healthiness of the olive oil...? That and olive oil is expensive (we get ours from Greece) so you're wasting it by using it to fry chicken cutlets

Canola Oil
You shouldn't use olive oil for high heat frying. It has a lower smoke point. A nutritionist told me that it can actually be harmful to use a low smoke point oil (Olive Oil, Coconut oil) for high heat frying. Frying itself is obviously not great, but if you are going to fry, use Canola or Vegetable oil.
Sauteing in Olive Oil is fine.

Vegetable Oil
I have been trying to bake them now instead of frying. If you use panko breadcrumbs along with regular breadcrumbs you get the same effect.

Canola. My sil uses olive oil and I can't eat her cutlets all I taste is olive oil yet she thinks she's so healthy cause she's using olive oil

Quick cooking question
Thanks everyone. I knew not to use olive oil. But I wasn't sure about canola or vegetable. I prefer to bake them. But my husband likes them fried once in a while. To be honest I shouldn't even be near a kitchen. Worst cook in America right here. Lol

But, why is a low smoke point unsafe/unhealthy? I prefer to cook them in olive oil because I find canola and vegetable oil make them too greasy. Is it just a burning issue?

My family always does olive. However coconut oil has a super high burning temperature and we use coconut for a lot of things too.

I use olive oil and don't have the flame up high. Takes longer to cook but its so much better for you than vegetable oil.
