Side Dishes

We don't eat boxed side dishes, but I feel like I could have more variety. It's usually rotated between orzo, quinoa, rice, and potatoes. Any suggestions for good side dishes?

So are you looking for varieties of those sides?
Like mashed potatoes, sweet potatoes, baked potatoes with toppings, rosemary garlic roasted potatoes, etc?

Or are you looking for more grains/carb side dishes? Like bulgur, farro, buckwheat, wild rice?

Or something different? Since everything you listed was mostly grains what about vegetables? Different types of salads or pan fried string beans in oil/garlic/lemon or steamed broccoli with lemon, or you can even serve fresh fruit cut up on the side.

If you can be more specific for what you are looking for, I can type up/link a bunch of yummy recipes!

Grilled or roasted veggies are an way favorite. Zucchini, potatoes, broccoli, onions, green beans, sweet potatoes, etc. When the weather gets cooler we'll do lots of pureed cauliflower or mashed sweet potatoes. We also have green salads a lot, usually with spinach as a base.

Thanks! More of the starch/grain-type sides. We have a variety of veggies with dinner so we're covered there.

OK.

Baked potato bar. Make baked potatoes and then have toppings available (shredded cheese, sour cream, butter, scallions, bacon/bacon bits, chives, olives, etc.)

Roasted red potatoes tossed in evoo, black pepper, garlic and rosemary.

Bulgur. It's like a Mediterranean rice/quinoa. Very good.

Millet. millet is good. its a fluffy grain and can replace mashed potatoes.

Quinoa-Veggie-Nut salad: toss together quinoa, italian dressing, carrots, cucumbers and mixed nuts chopped up.

Maple Balsamic Quinoa Salad: 1.5 cup quinoa, 1/3rd cup evoo, 1/3rd cup balsamic vin, 1/3 cup maple syup, 1 cup dried cranberries, 1 cup chopped pecans, scallions.

White bean and tomato rice salad.
cook 1 cup rice of your choice (white, brown, wild, etc.) Add 1/4th cup white beans, 1/4 cup chopped tomatoes, 1 tbs dill, 1 tbs evoo, 1 tsp lemon juice. So delicious. you can add garlic too if you love garlic.

pear-balsamic:
1 cup rice, 1/2 pear chopped, 1/2 tsp sage leaves, top with 2 tbs gorgonzola and 2 tsp baslamic.

macaroni and cheese?

I make a spicy tomato quinoa- quinoa, a can of diced tomatoes, a little olive oil and crushed red pepper.

Brown fried rice- cooked brown rice, garlic, scrambled egg, frozen asian veggies fried in a little soy sauce.

Mashed cauliflower

Cheesy "rice"- sauté riced cauliflower, garlic, salt, onion and sprinkle shredded cheese on top till melted

Risotto
Pasta salad
Potato salad (I make a bacon cheddar ranch one that isn't healthy but is delicious)
Sweet potato tots with maple dipping sauce
