I see what you are saying...in my mom's family, everyone lives in different states so weddings do require air travel and hotel stays, which adds to the overall cost. We're going to my cousin's wedding in Detroit this summer that will probably cost about $1000 just for the travel costs so the $500 seems reasonable for my parents (as aunt/uncle) to give in that situation.
What about going up to $600 if you think that is low? I would think in my head that is like $200 per adult and $100 for each child.

$500 for a Michigan wedding is going to be like hitting the jackpot there (I'm from Michigan). Most people give like $100, and they definitely do not cover their plate.

It's sort of a destination wedding for them...the bride is from there but I get the impression she is from a very well off family (both parents are doctors and she is as well). I won't be giving $500 as a cousin, but I will still give $300 I'm thinking. I give all of my cousins the same amount.

I tend to over-gift and unless your 2 children are 25 I do not think $1k is necessary.
Now that I think about it, my uncle/godfather gave $500 for him, his wife and 2 adult children and my mother was furious about how cheap he was. My mother is also obnoxious, so perhaps not the best barometer.

I've had several of my nieces/nephews get married. We gave the last one $600 from myself and dh. My kids are adults, so they all gave their own gifts.

So my uncle/godfather, my aunt, their 2 adult children (19 & 21) and 2 SO's - my uncle gave me $1,000. So maybe your mom isn't totally off with that. LOL
To the OP, I as going to say $400 but then when you said nephew, I thought $500 was reasonable.
As an aside, and this is not criticizing anything that anyone said on this thread, our NY mentality is totally demented. How can it be considered "cheap" to give several hundred dollars as a gift to anyone? It's so crazy. In any other part of the country it would be an extravagance. My cousin's MIL - from the midwest- balked when we were talking "standard" gift amounts here. And she and her husband are both physicians at the Mayo Clinic LOL

Yup! Where I'm from, even wealthy people don't give large monetary gifts, or expect you to cover your plate. That is unheard of there. Our midwestern family and friends came here for my sister's wedding, and the average gift amount was probably about $25-100

Weddings stress me out for this reason. It's the expectation that everyone has an unlimited amount of cash lying around. While I agree that the amounts stated in this thread are accurate as to what is "expected," some people just don't have it. I am not cheap by any means and would love nothing more than to give a $1,000 gift but doing that means that I have to decide which bills will not be paid.

I'm very close to my nephews so when that time comes (they're currently 5 months, 2 & 14 haha) I plan on giving them a few thousand each God willing.
However if I weren't that close to them I think $500-750 is sufficient. That is around what we received from our aunts and uncles when we got married.
ETA: Honestly though give what you feel comfortable with. NY is crazy with this especially LI. Most weddings in other states give average $50-100.
General rule of thumb in NY is cover your plate since most weddings are around $75-100, $500 is more than enough

What $$$ to give for a wedding??
For our wedding, our aunts and uncles all gave us $500-600 (and one or two went higher than that). Those were all just couples too... If it was my nephew and it wasn't just my spouse and I, then I would probably be giving more than $500. Especially if the two children are teenagers and older, I would probably do $600-700 honestly
