i know, i know... so simple, but i finally made it
i finally made eggplant parm!
i love it, but had never made it.
EVERYONE at home loved it. even SO's mom, who won't eat a damn thing... she didn't ***** and moan during dinner and cleaned her plate.
now, that i've demystified it for my pea sized brain lol, it will become an item that is part of our regular rotation.

Eggplant parm is NOT easy! Good for you! The first time I made it I hadn't done the salting/draining part of the process with the eggplant and it was so bitter it was inedible.
