Who has a kicka$$ bolognese recipe?

I want to make a yummy bolognese. I winged it last time and it was good but felt it was missing something...


Who has a great recipe? TIA Chat Icon

I'm a winger, but I make a good Bolognese...first fry off carrots, onion, celery and garlic in olive oil, than fry off ground beef and port, drain the oil, put that back in the pot, add lots of good red wine (one you would drink) a tin of tomatoes and some tomato paste. Simmer for a few hours and season to taste. Add some parmesean if you fancy it.

I also like this Bloody Mary Bolognese Sauce one, but only the British would put cheddar cheese in theirs! Good luck!

2 medium onions, finely chopped
4 celery ribs, finely chopped
2 medium sized carrots, finely chopped
5 garlic cloves, finely chopped
1/4 pound pancetta finely chopped
1 pound ground lean beef
1 pound ground pork
1 small can tomato paste
1 cup whole milk
1 cup white wine
1 cup chicken or veggie broth (low sodium)
fresh thyme, oregano, basil
salt and pepepr to taste, nice amount of freshly grated parmiggiano, and a few swipes on the microplane of fresh nutmeg

sautee the pancetta in a good amount of olive oil til the fat renders and it starts to crisp. add in the veggies and half the herbs. add in the beef (veal) and the pork and brown. add in the tomato paste, white wine, broth and whole milk. cook off until it gets nice and thick (at least an hour but the longer the better!) add salt and pepper to taste. when sauce is pretty much complete, add in the parmiggiano....to your taste.

the liquid amounts are a rough estimate as I am very bad with stuff and just eye ball it. having the right amount of base veggies for your ingredients is key I would say.

my recipe was mostly stolen from Lidia Bastianich with a few changes. namely the fresh herbs. I love them.

play with this until you get it to your taste.

I may have to make this now. it has been a while.

and tons of red wine instead of wine.

and no milk

also ETA: to say that I also use red and it comes out great as well. I just go to white most often, but I drink it while I cook Chat Icon and I prefer it to red generally speaking Chat Icon Chat Icon

oh boy.

I have a love/hate relationship with the 'rep" my sauce has. it's flattering but at the same time, I fear it would fall way short of expectations.

sometimes it falls short of my OWN Chat Icon if I am having a bad day.
