Farina Muffins....

Not a recipe BUT I am addicted to them. I have never had them before and I made some a couple of days ago....Thanks for the recipe Melbernai....So anyway I am assuming they are somewhat good for you. Does anyone know how many points as far as WW. Anyway I have been eating them like crazy......so yummy.

Its like corn meal but made with wheat. I buy coco wheats for my kids (they love them) It is basically chocolate farina and I made the muffins with that. I have a toddler who won't eat breakfast, but likes to snack instead....I figured this would be healthy for him to eat for morning snack. Where are you at?? I am sure you can get it at a supermarket....I get coco wheats by the cereal and oatmeal.

This is Melbernai's recipe (so if you like it send her a thank you) that I used....Also Farina is called Cream of Wheat.

Makes 12 regular sized muffins.

1 c. sugar
1/2 c. butter or margarine
1 c. milk
1 egg
1 1/2 c. all purpose flour
3/4 c. farina
1/8 tsp. salt
2 tsp baking powder

Preheat oven to 425

Cream together butter and sugar. Mix in milk and egg.

In a seperate bowl mix together dry ingredients, and then fold into wet ingredients.

Bake in greased or lined muffin tins for 20-25 minutes or until the tops are golden.

ENJOY!!!!


Edited to add...we eat cream of wheat like crazy....when I buy it I usually buy like three boxes....it is one of those things you never get tired of. You should try it with cooked apples....so yummy..or hot apple butter...I am hungry for some cream of wheat now.....

i plugged them into the recipe builder and i think it was 4 or 5 points per muffin...

Farina: Flour or meal (of grain or starchy roots.) Also sold as Cream of Wheat, farina is made from the endosperm of the grain, which is milled to a fine granular consistency and then sifted. Although the bran and most of the germ are removed, this cereal is sometimes enriched with B vitamins and iron. Farina is most often served as a breakfast cereal, but can also be cooked like polenta.
