as a veggie, i love green beans with beef.... just boil them and then add a little lemon and garlic, nice and light also... maybe some nice oven roasted red potatoes. easy, but take awhile... just cut the potatoes in half or quarters and put them on a cookie sheet and bake them. when they're done, just add top them with some salt and pepper, maybe some parsley or thyme...

Stupid question, but how do you make the green beans? How much garlic and lemon?

I LOVE grilled asparagus & so easy. Just trim the edges, coat w/ olive oil, salt, pepper & garlic powder & put on the grill. I put them in a veggie basket, but you could use tin foil so they don't fall through. Delicious!
I'd also make a potato salad or roasted potatoes. You could actually just cut up some small potatoes & onions, add seasoning, butter or olive oil & put in a tin foil pack. Then throw right on the grill.
