Coat a baking sheet with cooking spray. Cut potatoes into wedges, leaving the skin on. Lightly spray wedges with cooking spray and season to taste.
Bake until golden brown, about 40 to 60 minutes, turning after 20 minutes.
Top with cottage cheese and salsa.

I take the easy way out and buy Stop and Shop frozen fries. I get the shoestring fries and for 45 is 3 points.
