Breakfast for Dinner?
I am making French toast and turkey bacon for dinner tonight. The kids are looking forward to it.. but I am trying to figure out a way to sneak in some veggies? I always serve veggies with dinner because they don't eat them with breakfast and I KNOW my husband isn't making them eat them with lunch.
I know we can go a day without it.. but if there is some veggie that might go 'okay' with breakfast for dinner I would like to incorporate it.
Any thoughts??

This recipe uses the pre-bagged shredded poatoes but I would shred my own and use whatever veggies I have in the fridge.
Garden Veggie Hash Browns
3 tablespoons vegetable oil 1/3 cup chopped red onion 1 medium zucchini, coarsely chopped 8 stalks asparagus, cut into 1 ½ inch pieces 1/2 cup chopped red bell pepper 1 1/2 cups small broccoli florets 1 package Simply Potatoes Shredded Southwest Style Hash Browns 1/4 teaspoon salt 1/4 teaspoon garlic powder
1. Heat 1 tablespoon oil in 12-inch nonstick skillet. Add onion. Cook over medium heat, stirring occasionally, 2 to 3 minutes. Add zucchini, asparagus, red pepper and broccoli. Continue cooking 2 minutes, stirring occasionally, until vegetables are crisp tender.
2. Add 1 tablespoon oil and Simply Potatoes to skillet. Spread Simply Potatoes and vegetables in an even layer; press down lightly with spatula. Sprinkle with salt and garlic powder. Cook 6 to 7 minutes or until golden brown on the bottom. Drizzle with remaining 1 tablespoon oil. Turn Simply Potatoes over with spatula. Continue cooking 6 to 8 minutes or until Simply Potatoes are golden brown and tender, turning again if necessary.

you could make home fries, with onions & peppers,& other veggies.
well you could do some strawberrys or fruit with the french toast....

??sweet potato homefries, I have never made them, but I make mashed sweet potatoes and fries with them, so it might work! BTW, I loooove breakfast for dinner!! One thing we do is spinach cheese scrambled eggs, they are so good!

Mini Spinach Frittatas made in the oven in cupcake pans!
Ingredients
5 eggs 2 tbs low fat milk 3/4 cup diced red pepper 1 package of chopped frozen spinach 5 ounces cup soft goat cheese (chevre) salt and pepper to taste
Directions
Microwave spinach on high for two minutes. Wring with hands to drain excess liquid.
Beat eggs and milk in a small bowl. Mix in goat cheese.
Add veggies and salt and pepper to taste.
Pour muffin tins coated with canola cooking spray.
Bake at 350 degrees for 12 to 15 minutes, or until firm and just golden on top.

You guys are AWESOME!
I actually kind of combined some ideas and made a sweet potato veggie mix. They love it.
I am DYING to try the mini Frittatas! I promised the boys breakfast for dinner at least 2x a month.. so that's gonna be the main course next time up!!

mmmmm.....those sound really good! I think I'm going to try to make those too.
