ground chicken?
what do you usually make with ground chicken? i got some the other day on sale, but i'm not sure what to make with it

I actually just took out some ground chicken to make chicken burgers tonight. I pretty much do it the same way as if I were making regular burgers, so whatever you like in regular burgers, add it in! Onions, garlic, ketchup, breadcrumbs, etc.
You could also do a chicken loaf, chicken tacos, chicken meatballs, etc....pretty much anything you would use ground beef for.

I make Dan Dan noodles semi-often. my husband loves the recipe I have. I also use it for chicken tacos. And you can use it for chicken chili.

My favorite dish with ground chicken is buffalo chicken chili mac.
I've also done meatballs with ground chicken, empanadas, and sloppy joes made hot wing style.

I usually make it with ground turkey but it would work with chicken:
Ground chicken with peppers and onions. Add italian dressing.
Boil egg noodles when almost done, add green olives to warm.
Drain noodles and toss with meat. Add more dressing if needed.
It sounds very odd, but its tasty and very low fat.
we use low fat/fat free dressing.

How do you make Dan Dan noodles??
1 teaspoon oil (I use canola)
1/4 cup green onion, minced
1/2 teaspoon garlic, minced
1/2 teaspoon chili paste
3/4 pound ground chicken, cooked
8 ounces egg noodles or any asian noodles, cooked
cornstarch
Sauce
2 ounces soy sauce
1 ounce cooking wine (I use dry sherry)
1 teaspoon oyster sauce
1 teaspoon sugar
7 ounces chicken stock
Heat wok or large skillet, add 1 tsp oil and sear the chili paste, garlic and green onion for 5 seconds, using caution to avoid inhaling the direct fumes.
Add cooked ground chicken, tossing and stirring for 10 seconds. Add all the liquid ingredients and simmer for 20 seconds.
Add a "slurry," equal parts of cornstarch and water mixed together (a tsp or 2 of each) to thicken the sauce. Consistency should be thick enough to stand on top of the noodles.
Pour sauce over a serving plate of hot cooked noodles. Garnish with bean sprouts and julienned cucumbers.

Chicken burgers with spinach & feta! Just toss in some feta & a box of forzen chopped spinach and mix.....no seasoning needed! So delish!

chicken meatballs (parmasean, breadcrumbs, parsley, egg, and garlic) brown them in a pan then cook it in chicken broth, add either cherry tomatoes into the broth or diced tomatoes if you can't get good fresh ones in the winter. You can thrown in some other veggies and serve with whole wheat pasta.
Chicken burgers - add anything into them - from sundried tomatoes, to cheese or other veggies. Also are great with herbs too.

I make everything I would make with turkey chopped meat or regular chopped meat. In fact we only use ground chicken at home.

I made meatloaf with it last night.
We make chicken burgers a lot too. With a lot of variation. Spinach and feta, buffalo with blue cheese on them, chopped veggies etc.
