Calling all health nut teachers!
So, now that I will have a class, I will have less flexibility with lunch (I used to work more than school hours, so would get a longer lunch and would go home or go out)
I want some healthy lunch and snack ideas.... I have a whole bunch, but wanted to see what else people do!
I am a vegetarian so I won't do chicken, fish, turkey, etc.....
Eta also, do you work out before or after work?

Im a vegetarian teacher too LOL
I buy these cous cous burritoes. theyre cheap and good for you.
I eat 1/2 progresso hearty tomato soup 1/2 whole wheat mustard cheese sandwich.
Fruit salad
Salad with feta cranberries and balsamic
Baked tostitoes scoops with fresh salsa
carrots and dip
Vegetarian Chili
Weight watcher frozen meals etc.
ETA: I work out, when I can, at 8 so I can watch all my shows in peace!! LOL

I bring hummus and already cut up veggies and a lot of cold pasta salads that I can eat while working. I do a lot of homemade breakfast protein shakes too.

(Mostly) veggie/vegan teacher here! I make couscous, quinoa, orzo, ww pasta salads on Sunday (big batch) and bring some each day. I also eat a TON of rice and beans-I get the singles of brown rice and bring a containers of rinsed beans on Monday for the week. I usually eat it with hot sauce and avocado. I also like the Amy's burritos, and their vegan tamales are bomb-diggity.
I also make Kimberly Snyder's Glowing Green Smoothie every morning and bring it in a blender bottle. Its the best thing ever.
I also sometimes get Pinteresty and make things like black bean burgers, or stuffed sweet potatos, vegan chili, etc. and bring that to heat up. I try to mix it up. I always have a smoothie in the morning, sometimes a coconut yogurt, and at 10am (when my students have snack) I split an avocado with my para, lol. I don't really like soup, sandwiches or salad for lunch, so I have to be creative. I like something more substantial, since I go to night class still.

I was vegan for 15 years, but I started eating local farm eggs and some dairy... I guess I am "mostly" vegan but I hate when people say stuff like that!!!

I became vegan because of allergy/ health issues but I do "splurge" once in awhile. No one is perfect!

lol...I just said that.
I was always a meat-eater, but on a quest to be as healthy as possible, I have found myself eating mostly vegan. I still eat meat on special occasions, but very rarely at home anymore and I have been dairy-free for a while. I know I am not a real vegan or vegetarian, but I use that label sometimes because it most accurately describes how I eat 90% of the time, and how I cook nearly 100% of the time.

I eat mostly fresh fruits or salads at work. I am now grain free too so my diet is extremely limited. Fresh fruit and veggies is about all I eat in many different combinations.

Calling all health nut teachers!
I had a long commute so exercise in the AM was out for me. Getting exercise in was tough. I took classes a couple nights a week but the best thing I did for myself last year was taking a 20 minute walk during my lunch period. It was a four story building so I did lots of stairs, but didn't sweat TOO much.

hummus and pepper/cucumber sandwich
peanut butter/almond butter/sunflower seed butter and jelly sandwich
sometimes I will make a big batch of bean salad at the beginning of the week (black beans, corn, peppers) and bring that with chips or crackers
I mostly like to bring things like sandwiches, that I can eat with one hand. I have a 30 minute lunch, and I always work through it.
For snacks, fruit, trail mix, cereal
ETA: as for working out...depends on my and DH's schedules for the day. Sometimes I get up at 4:45 but more often I go after school if DH can be home for DD. I don't work out as much as I would like...usually 2 days during the work week, Saturday and Sunday

most of mine are posted already.
I'm big on hummus - mostly with carrots, b/c they are just easier and ready
I love cucumber tomato sandwiches too
If I can get my act together I will do a salad.
If we have leftovers, I set aside a portion for me to bring in the next day.
That's pretty much all I do - not exciting.
