How to cook TG turkey
Ok one more turkey question. Help please!
So I'm gonna brine the turkey I have a roasting pan Now what do I put in the turkey cavity prior to cooking? What seasonings do you rub on the turkey??
And my biggest concern do I put water in the pan?? If so how much??

I would rub it with butter and herbs - or make a herb butter and use that. Rob it all over the skin and underneath. I very generous with the butter. In the cavity I put carrots, onions quartered, garlic, stems of thyme and/or rosemary and/or sage. I don't think I ever added any liquid. It makes its own liquid as it cooked. Just baste it every half hour - 45 minutes.

I know this is taboo but I still stuff my turkey. I make a sausage stuffing and stuff it in there.
I usually use an herb butter and rub it all over the bird or I'll do olive oil and sazon and brush it all over and then layer some bacon on top of the turkey. I tent with aluminum foil for the first couple hours of cooking and then take it off for the last couple of hours. I put a little turkey broth in the bottom of the roasting pan and leave it for the first couple of hours and then I baste after that every 30 mins until its done.
