Re: corned beef question

Divide the ingredients and make 2 batches in 2 pots?

Or, cook the potatoes separately... I've heard people say they don't like the texture of the potatoes cooked in with the meat. They can get mealy.

That's all I can think of, other than buying a bigger pot! Chat Icon

corned beef question

I cook all the veggies separate since DH doesn't like them cooked with the meat.

Re: corned beef question

You definitely don't want to cook the cabbage with the meat! Chat Icon I know it's "tradition" to do it that way, but the cabbage comes out grey and slimy. DW learned from Alton Brown that if you just blanch the cabbage for a couple of minutes, it stays green, but softened.

I used to dry heave trying to eat, or even smell grey cabbage. Now that DW blanches it, I can eat several pounds of it. Chat Icon

corned beef question

I always cook the potatoes separately and then put the corned beef and cabbage in one pot. I usually add the cabbage on top of the meat for the last 30 mins or so.
