Salmon Recipe?

I am considering making salmon for Father's Day, but the last time I made it in my grill-pan, it smoked up the house.
We aren't pulling out the BBQ, so does anyone have a fool-proof OVEN recipe for salmon that does not call for maple or soy sauce?

Salmon Recipe?

I just did a champagne poached salmon. Would you be interested in poaching salmon?

ETA:
http://www.preventionrd.com/2013/06/champagne-poached-salmon-with-champagne-cream-sauce/

I made it this weekend. I did four salmon filets in one 10 inch pan. I did about 1 1/2 lbs. I didn't need to double the champagne liquid I poached it in. I did double the sauce recipe. I didn't have champagne vinegar, so I just use white wine vinegar. I served it over quinoa and with a side salad. Also I used frexinet (black bottle) sparkling wine.

I don't think the poaching would be a problem, but FIL is really health-conscious so the cream sauce would not go over well...thanks though! Looks yummy.

Re: Salmon Recipe?

my go to for salmon:

Mix together equal parts
honey
dijion mustard
brown sugar
squeeze in some lemon juice

spread generously on the salmon filets and bake for 20-25 minutes at 350.

The glaze also works well on chicken.

Re: Salmon Recipe?

I make pistachio crusted salmon that i like a lot. This is the recipe I used, but I had salmon filets without the skin, so I winged it a bit.

1 (2 to 3-pound) side salmon, skin on
2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Directions

Preheat the oven to 375 degrees F.

Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.

Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)

Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.

Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes.

Re: Salmon Recipe?

I just put the Salmon in the oven - seasoned with salt and pepper, a pat of butter on each piece and white wine (usually Pinot Grigio) (about 1/2 a cup).. in a 375 degree oven... usually about 20 minutes or so until its cooked through.

I usually poach it in water, soy (which I know you said no to but you can use terriki or any sauce), garlic salt, old bay.

Then with the leftovers I make salmon burgers.
Shred the salmon, add an egg, breadcrumbs to bind it, basil (fresh if you have), garlic salt, pepper. Then I dust them in more breadcrumbs and sprinkle w/ old bay. I cook them on the stove until the outside is brown and they are heated thru (to cook the egg). DS LOVES them.

Check out reynold's wrap website- they have a bunch of foil packet recipes you can try.

Re: Salmon Recipe?

I steam it in tin foil packets. I usually just marinate it in teriyaki and bake for 20 minutes

Mine is so easy and always a big hit!

Make a pot of mashed potatoes as you normally would.
Take your salmon and put it in an aluminum pan that has some olive oil drizzled on the bottom of the pan and drizzle the top of the salmon with some more.
Sprinkle salt and pepper and fresh parsley. Slice some garlic and put that on top too.
Then take your finished mashed potatoes and slather the top of the salmon with it. Make sure it covers the entire salmon and is a thick layer.
Put the pan in the oven on 350 for 30-40 mins and then when you take it out cut up some scallion and put it on top.

It's delicious and each bite has mashed potato on top!

Enjoy!

This is what I do except no butter and sprinkle with garlic. You can always just drizzle with olive oil--salmon is fatty to begin with. Very easy, healthy and delicious.

I just season with olive oil, salt & pepper and broil!

Then I slightly break it up with a fork and serve it over any curly pasta tossed with homemade pesto cream sauce.

my grandma use to always make it for me when i was little with mayo, breadcrumbs, and a lil bit on garlic powder. you could also put lemon juice on it but i dont like it like that. you can even cook it in the toaster oven. it doesnt sound that good but it really is!
