Any baked/ roasted squash OR beet recipes?

I typically roast spaghetti or butternut.

But I'm looking to try some knew ones? Acorn maybe?

I also have never made beets, yet I love them. Any tips/recipes?

Yes, definitely do! ETA- it is really spicy so be forewarned!
Also, Trader Joe's has really good prepared beets in the refrigerated section.. to save you the trouble of roasting and peeling. I love beets too :)
I also saw a recipe for butternut squash hummus yesterday from Marcus Samuelsson:
Ingredients:
1 small butternut squash, halved and seeded (separate out seeds for roasting for garnish)
2 cans garbanzo beans, rinsed
4 cloves garlic, minced
5-6 tbsp olive oil
2 heaping tbsp tahini
5 tbsp vegetable broth
salt and pepper to taste
Method:
Start by roasting the squash. Place the two halves in a pan or on a cookie sheet, drizzle in olive oil and salt and pepper, and roast at 350 degrees for about 30 minutes or until you can easily slide a knife through the flesh of the squash.
In a separate pan, spread out the seeds to roast. Drizzle in olive oil and salt and pepper, and roast simultaneously (at the same temperature) for about 15 minutes. Every few minutes stir them around for even roasting.
When the squash is done roasting, let cool and then scoop out the meat, being careful to avoid the skin. Combine all the ingredients and blend well until the hummus is smooth and creamy. (You’ll have to taste it a lot to get the right amount of salt and pepper, but that’s the fun part, right?)
Serve right away with a drizzle of olive oil and the roasted squash seeds sprinkled on top, or store in an airtight container in your fridge. Your homemade hummus should be good for a week and a half to two weeks.

I LOVE spicy!!!


Tonight I made this: & read you can sauté the beets greens. So I sauted them with garlic & shallots, & used a little of the below recipes dressing on it & had the leaves on the side.
I can't believe I NEVER roasted beets before. So easy & I've been only eating beets at restaurants...NO MORE!

Roasted Beets with Feta

4 beets, trimmed, leaving 1 inch of stems
attached
1/4 cup minced shallot
2 tablespoons minced fresh parsley
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon red wine vinegar
salt and pepper to taste
1/4 cup crumbled feta cheese
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Wrap each beet individually in aluminum foil, and place onto a baking sheet.
2. Bake beets in preheated oven until easily pierced with a fork, 45 minutes to 1 hour. Once done, remove from oven, and allow to cool until you can handle them. Peel beets, and cut into 1/4 inch slices.
3. While the beets are roasting, whisk together shallot, parsley, olive oil, balsamic vinegar, and red wine vinegar in a bowl until blended; season to taste with salt and pepper, and set aside.
4. To assemble the dish, place the warm, sliced beets onto a serving dish, pour vinaigrette over the beets, and sprinkle with feta cheese before serving.

Oh yum, that sounds amazing. I never buy beets bc it takes so long to roast them, and then peel them. I know it isn't hard, and they are SO good, but I just don't have the time/energy at night! I wonder if you can do them in a crockpot???

The way I roast them is so easy...today I actually did 3 bunches, done pretty quick.

I cut off the stems; scrubbed them really well with veggie brush; wrapped each individually in foil & put on cookie sheet (in case leak)

Roasted about an hour at 400. (I actually roasted 2 acorn squashes, & a spaghetti squash for later this week)

Let them cool. Then I wore cooking gloves so doesn't stain hands, & the skins slide right off.

I just wanted to ask how you did the acorn squash? I made one tonight (microwaved first, then finished in the oven with some butter and brown sugar) but once it was done I couldn't figure out how to serve it. Didn't help that we were ready to sit down and it was obviously hot to try to handle but I couldn't figure out how to get it out of the skin. Is there an easy way to do it without having to wait forever for them to cool?

I actually roasted it & then let it cool, because today I made an amazing soup (1st time). So it came right off the skin. But I am planning on roasting it the way I do butternut (remove the skin, cube, & roast)

Thanks. I remember trying to peel one once but it was such a pain because of the deep ridges. Maybe I should have cut it into wedges first.

Re acorn squash-- you can totally eat the skin! If you cut it into slices, then spritz some olive oil on it, and some seasoning- I like chili powder, it roasts up really well and I really like the skin. You could do some honey or maple after you take it out of the oven too.

Yeah, I realized that when I roasted it too! (my first time I turned it into soup, so I scooped it out.). But when I make it this week I'm planning on cutting it into wedged & roasting it with a little salt & rosemary (I love that with my butternut, so figured I'd try it with it)
