tomato sauce help
we mad a HUGE batch of sauce for ziti, and chicken parm for a party coming up this weekend.
It's a little thin and a little bland.
What would you do to help it out?

maybe add a can of puree or paste and add some wine to flavor it up- like 2 cups. red wine.

I'd sautee some fresh minced garlic and onion in some olive oil (maybe even add some finely chopped carrots for sweetness), then add some wine (for a marinara sauce, I'd use white) and reduce it to just a tablespoon or two of liquid, then add your sauce back in to the pot and simmer it for awhile. That should add some flavor. Then, you can also stir in some dried herbs while simmering (basil, oregano, etc.) and even add some fresh basil right at the end of the cooking process.
Simmering in for awhile should thicken it up, but I would also add a couple of small cans of tomato paste while it's simmering.
Did you add enough salt? Sometimes just adding a little more salt really perks up the flavor!
