Vegetable based fall recipes
Anyone have any great vegetable based fall recipes to share? I went to a fall cooking class and have been really trying to change the way we eat, but looking for some new recipes! We eat almost anything!

Here are my suggestions:
1) I do acorn squash, cut it in half, bake at 400-450 degrees for 30 minutes, then put a little butter or maple syrup or brown sugar in the middle of each one and bake for 15 more minutes. So delicious.
2) Pan-roasted string beans with a lot of garlic and lemon and EVOO.
3) A side salad made of apples, pomegranates and cheese. this not only tastes good but look great.
4) Small red potatoes and turnips and parsnips roasted in the oven with evoo and a lot of rosemary and pepper. A little salt makes it even better.
5) Kale chips. Cut and dry the kale. Evoo and salt, bake in the oven. I forget now... i think I do 400 for 10 minutes.
6) Candied carrots. Bag of frozen carrots in the microwave but put in maple syrup or butter and brown sugar before you cook it. Yum!
7) Sweet potato anything really! Great for the fall.
8) Spinach and mixed greens salad as a base. Then toss dried cranberries, red onion and some tomatoes into it. I usually do a red vinegar based dressing but anything would work.
9) Eggplant. Either roasted in slices or cooked and then pureed as a dip.
10) Asparagus with lemon and garlic

I love roasting veggies in the fall! A few of my pinterest finds, some I've tried and some I haven't yet.
Balsamic Roasted brussel sprouts
Roasted Parmesan green beans
Balsamic and Rosemary Butternut squash
Roasted mixed veggies: Potatoes, zucchini, baby carrots, sweet potatoes, whole garlic cloves, onions and tomatoes at 350 for 45 minutes. Dust with parmesan for the last 10 minutes.
