Sweet potato casscerole
I keep seeing people making sweet potato casscerole for thanksgiving dinner and it sounds yummy. Anyone have a recipe they can share?

Here is one Whipped Sweet Potato with Marshmallow Topping Recipe:
- 3 cans (15 oz. each) sweet potatoes, drained - 1/4 cup butter or margarine, melted -1 tsp. ground cinnamon -1 tsp. ground ginger -1/4 tsp. ground nutmeg -3 cups JET-PUFFED Miniature Marshmallows HEAT oven to 350°F.
BEAT potatoes, butter and spices with mixer until blended.
SPOON into 1-1/2-qt. casserole sprayed with cooking spray; top with marshmallows.
BAKE 15 to 20 min. or until potato mixture is heated through and marshmallows are lightly browned.
NOTE: I like to make this recipe, but slightly different. I go very, very light on the ginger/nutmeg. I also use half cans, half fresh potatoes. and I don't drain the cans, I use some of the liquid. So I cook the sweet potatoes in the microwave. Blend them with the cans and some of the cans liquid and the butter. Then I continue. I think this tastes fresher, lighter, sweeter and better.

No recipe but it's my favorite part of thanksgiving! Sweet potatoes + marshmallows = AMAZING

My recipe is not healthy at all, but we only eat it once a year...lol. I don't have an exact recipe. Depends on how many I am making. I boil the sweet potatoes til just soft. take out of water and once cool I peel and slice them in about 1/2 in slices.
butter a casserole dish then putt sweet potatoes in.
Mix together in a separate bowl about 1 part dark caro syrup, 1 part brown sugar, a few squirts of real maple syrup, about 1/2 stick melted butter and a few sprinkles of cinnamon. pour over sweet potatoes Bake til warm....20 minutes or so then top with mini marshmallow and put under broiler quickly to brown marshmallows.

I've been making this for years but I use 2 large cans of the Bruce's yams. Just easier. I also just top with mini marshmallows instead of pecan topping (I'm allergic). Sweet, easy and yummy!
INGREDIENTS: 4 cups sweet potato, cubed 1/2 cup white sugar (I use brown) 2 eggs, beaten 1/2 teaspoon salt 4 tablespoons butter, softened 1/2 cup milk 1/2 teaspoon vanilla extract
1/2 cup packed brown sugar 1/3 cup all-purpose flour 3 tablespoons butter, softened 1/2 cup chopped pecans
DIRECTIONS: 1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
2. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
3. In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
4. Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

Checkout The Chews website they have great thanksgiving recipes one included a yams casserole that included pecans (if you like nuts) it looked delicious!
