So Sean is insisting I make a Brisket for Christmas, against my better judgement. Does anyone have a good recipe by any chance????

Re: Beef Brisket...........????????
I just made a brisket the other night. I don't do mine in a slow cooker, nor in BBQ sauce. I do it the way my Jewish ex-MIL taught me. It sounds like a lot of steps but it's really not.
Rub meat with a mixture of coarse salt, black pepper, garlic powder and paprika.
In a heavy pot, on medium heat, add enough olive oil to coat the bottom. When hot, I sear the meat on both sides getting a nice crust. At this point I add one chopped onion and let it brown a little bit and then add enough water to come just to the top of the meat. Add one small can of tomato paste and a bay leaf. Cover pot and simmer on very low for about 2.5 - 3 hours turning the meat every now and then. You'll know it's done and nice and tender by sticking a fork into it and lifting. The meat will slide off the fork.
Remove brisket, letting it sit for a little bit before slicing. If it's too hot, the meat will shred.
To make a nice gravy, you probably won't need to add any other seasoning to the liquid in the pot. Just mix some flour with water in a cup until thickened and slowly pour into simmering liquid while whisking until desired consistency.
