I know you love cooking on induction (I have never cooked on it) but I am not sure how much control you have over temperature. With gas you really have so much control. Also, go for open gas not sealed burners. Sealed burners are what traditional residential ranges are. You can't compare! Actually, if you guys can get away for a weekend, Harrah's in AC has a Viking Cooking school and they have different meals they do. The ranges are all open.
Also, look into Duel fuel. The electric ovens cook so much better than the gas. The top would be gas.

With the open burners, I really see no need for the induction. I can honestly say it boils & cooks faster than I can perform...sometimes I look like an episode of Chopped, running around to "keep up" with the range. Don't forget by code & for your own safety, you need & must get an exhaust unit worthy of a restaurant. At least 1200 btu's. if not 1600 for the 60". Please consider the Culinarian, don't be intimidated by the open burners. If you've only cooked on electric, this will be a whole new world for you. I bought mine at Grainger on Jericho, close by you. They had the best price, ask for Mindy. She was an absolute joy to work with & the only honest vendor in my grueling year long reno! BTW, why not go to Boston & shoot the sh%t for a day with Trevor, they pay for it, you try everything out & get a real feel for your investment.

Control is instant. I can bring a boil to one pot, turn on another burner, immediately switch the pot to it and the water is boiling. It's an amazing science. I asked the salesman at the store and he agreed, induction will bring a boil faster. I do large pots of water for potatoes or pasta during holidays and it's crazy how fast I can bring it to a boil.
As much as I'd prefer the open burner, it doesn't seemed to be offered in the configuration we want. And we know we'd use the 12" grille and 24" griddle the most on this unit.

PLEASE,PLEASE,PLEASE buy the Capital. I have the same exact one you posted. Magnificent! It takes a bit to get use to the open burners but similar to having lets say, front load washing machines, you can never go back to regular ones. I had the Wolf & did not love it. If you FM me your cell # I'll send you pics. Plus truthfully, for the price, I thought it was a bargain. Just a tip...I put the grill in the oven when I self clean & they come out totally clean.
Edited to add, I also got the wok attachment ( I think it was a $240 upgrade) & rotisserie.
I've never used a wok before. I was watching videos on youtube by Eurostoves (they sell appliances up in MA and they're very active on GardenWeb.com) and the rotisserie looks fairly easy to use. Do you use it often? Their videos on the Culinarian are really helpful and are getting me psyched.

My mom has the capital 48". It's fabulous. It's my favorite part if her house. That said, she has had them out THREE times to fix the temp With the oven. Also, the oven door is LOW. My mom is only 5' 1", it's a PITA to open and close. It's very close to the floor. I squat down if I'm moving stuff around in it. But it's still freaking amazing.
Eek. Does she have a gas oven or electric? I haven't seen the specific range we want in person...they're almost like a ghost. Appliance World did have a 36" Capital with a gas oven and I did notice the door does seem to be low, but the one thing that concerned me the most was the small size of the interior. Luckily the electric ovens are considerably larger. I'll have to pay attention to the door location again when we go back. 
They have the gas one. The oven is not as big as it should be, I think. I feel like if all the racks are in you are limited in what can go in.

The induction is just another option if I'm just making a quick meal, with easy cleanup, want to bring water to a boil and move over to the range and if my mom or mother-in-law want some quick & easy to work on.
When we had the 30" induction designed to be in the island, we had a downdraft vent behind it. Right now we have a 1200 CFM Vent-A-Hood in the design and being that I don't plan to do any major cooking on the 15" induction, the 60" 1200 CFM should be sufficient. (Whether there's an issue at inspection is a different story, but my DH is pretty conscious of that stuff and researches the crap out of things.) I currently have a recirculating hood over my induction and it seems to do the job. If I was to just buy a stand alone induction hob, I wouldn't have a range hood for it.
The reason why we're interested in the Connoisseurian is for the dual fuel. The electric ovens give you a considerably large interior. When I looked at the Precision at Appliance World, I couldn't get over how small the oven was. The salesman said that was one of the biggest complaints. He's also a big fan of open burners. He got so excited when we started talking about Capital, BlueStar and American Range. LOL
We'll see what happens. The idea that they don't offer our cooktop configuration in an open burner is a bummer. I'm hoping they at least have it in a sealed burner and that's not incorrect info on a different website, otherwise we're definitely back to the drawing board.
My BIL lives in Boston and we'd go up there to visit Trevor/Eurostoves, but this is my DH's busy time of year (lots of housewares/tabletop shows.)

same here!
We've looked at Wolf, but their burner power doesn't come close to Capital, AR or BS. The one thing I really do like is the electronic readout, how it pops open so you can look down to read it whereas Capital's is on the front of the oven, making it a little difficult to read it.

I love everything about that kitchen, including the CornuFe, but unfortunately the CornuFe won't fit our needs.
Looks like the 60" Capital Connoisseurian is in the lead.
