Delicious as a side dish but you can add some cooked chicken to make it a full meal.

I put blanched peas, chopped spinach, toasted pinenuts , and roasted garlic in quinoa. Then I bake chicken that I've marinated over night in lemon, apple cider vinegar, olive oil, and fresh chopped tarragon. Cut up the chicken and add it in.
I put lemon tarragon vinaigraitte on it and it's amazing. It's even good cold the next day, except for the pinenuts before they get soggy.
