I'm making prime rib also. Aside from mashed potatoes, I am making a string bean dish (with parmesan cheese) and a carrot & onion dish, and bread. We are also having lasagna

My SIL makes Prime Rib for Christmas day. It's seriously an entire day of eating. She makes a killer potato leek soup, scallop potatoes, roasted brussel sprouts, corn, and just about every veggie you can imagine. Also one of her courses is a pasta dish like manicotti.
