What are some of your favorite meat free meals that you will be making?

I do not celebrate lent, but some great vegetarian meals are:
-penne alla vodka
-salads, all different kinds
-vegetable fajitas
-cheese lasagna
-soups, all different kinds
-eggplant parm
-cabbage antipast
-dip platter (like the turkish style combos- hummus, babaganoush, tzatziki, bean dip, etc.)

-Shrimp stir-fry with veggies
-Salmon
-Tuna casserole
-Macaroni and cheese
-Angel hair with oil and garlic
-'No meat' baked ziti - just marinara, ricotta and mozzarella. You could also do it with spaghetti squash.
-Balsamic-marinated vegetables in a wrap with some mozzarella
-Grilled cheese and tomato soup
-Breakfast for dinner: French toast/pancakes and eggs
-Egg salad sandwiches or wraps
-Salad topped with tuna or grilled shrimp
-Cheese quesadillas with rice and beans

I've been vegetarian for 20 years now. Here are some of my faves:

Homemade pizza (topped with just sauce and cheese or veggies as well)
Penne with vodka sauce
Pasta primavera
Peppers stuffed with rice, peas, mushrooms and cheese
Vegetable and tofu stir fry
Soup...lentil, carrot ginger, tomato, mushroom barley, pasta fagioli...
Dahl, curried vegetables and naan or rice
Falafel sandwiches or platters
Salads
Quinoa and black bean tacos

flounder (or any white fish) with breadcrumbs in the oven with veggies

Meals for Lent

Some of these ideas are great... Falafel!?! Yum def. making that!

Shrimp and veggie stir-fry
Baked Fluke oreganata or with spinach and feta with lemon
Eggplant so many ways
Pita pizzas with red sauce or spinach, broccoli and cheese
Vegetable quiche
Stuffed acorn squash with wild rice or Quinoa
Risotto with mushrooms or shrimp
Stuffed brook trout
Sushi

The sushi is my favorite. Any excuse to sneak out for 1/2 hour these days.....

Spinach lasagna
Grilled cheese
Tofu stir fry
Peppers with rice and cheese
Baked ziti
Fish and chips
Omelettes

My DH stopped eating meat a few months ago so i've been trying new recipes.
Last night i made something really easy that was delish especially in this cold weather.
Farrow with wihite beans, spinach and tomato

Farrow cooked in low sodium broth for 30 minutes, in a separate pan cook cannelli beans with organic tomato sauce, fresh spinach, a little pepper( i use red pepper for kick). Cut grape tomatoes in halves and set aside.
When the spinach is cooked and the farrow is cooked combine it into one pot, add asiago or parmesan cheese to taste, toss in cut tomatoes for a few minutes and serve.

Any seafood
Pasta
Vegetarian risotto
Grilled cheese
English muffin pizza
Mac 'n cheese

I am going to broil Portobello mushrooms with mozzarella cheese tomorrow.

Once in awhile, I will buy some type of vegetarian meat substitute, so I may make a meal or two with that.

Escarole and beans soup
Rigatoni and broccoli garlic and olive oil
Salmon
Flounder breaded cutlets
Linguini with whit clam sauce
Vegetable quesadillas

Meals for Lent

I saw Rachael Ray make something the other day with sausage and tonight I did shrimp instead.
I took 6 plum tomatoes, got rid of the stem end, cut an x into them and roasted them on a baking sheet at 425 until soft. Meanwhile steam Kale until soft. Boil water for pasta. I used whole grain penne. Sautée shallots and garlic. Add raw shrimp and some sherry or white wine. Add kale and tomatoes to the pan, fresh thyme and basil, some red pepper flakes, salt and pepper. Finally, I grate in some lemon zest. Stir in cooked drained pasta and some pasta water, smmer for a minute then drizzle with extra virgin olive oil. It was out of the world!

Meals for Lent

I do fish every Friday, so we get the fish into our diets.
Last night was Monk Fish
We also like Lemon Sole, Halibut, & Tilapia. I like pretty much every fish except salmon, but we keep it white so my daughter eats it. I tell her it's chicken lol
