Make ahead veal parm?

I'm not going to be home tomorrow and I have a pack of veal cutlets in the freezer. to avoid DH needing to get takeout, I was thinking of frying them up tonight, topping with sauce and cheese, putting in the fridge and then he can pop in the oven when he gets home.

Do you think the sauce will make the veal too soggy?

I'd fry them and leave them dry -
He can manage topping them w/ the sauce and cheese - otherwise, theyll be soggy and gross.
