Zucchini recipes
So we planted a lot of zucchini in our garden and there's a lot growing. I make "green spaghetti" for the boys and they LOVE it. Any other good and easy recipes to try? Thanks!

Zucchini is my favorite!! I make so many things with it; these are my favorite recipes:
Sautee in garlic & oil, serve with whole wheat pasta & ricotta...sooooooo yummy!
Zucchini quiche -3 cups zucchini -1 medium yellow onion -2 cloves garlic -3 eggs -1 cup bisquick -2 cups shredded cheddar cheese -1 1/2 teaspoons baking powder Mix all together except zucchini; after ingredients are well mixed, "fold" zucchini in Pour into buttered baking pan or muffin tins -sprinkle top with bread crumbs & grated cheese -bake for 30-45 min @ 350 Everyone always loves this and it's so easy!

Zucchini bread zucchini muffins stuffed with chopped meat and baked zucchini parm grilled zucchini sautéed with onions, garlic zucchini omelets, yummm

I slice them thin and put oil, salt, pepper, and garlic powder, then grill them. So easy and good

I marinate them in a little bit of cherry balsamic vinegar w/ olive oil and tomatos. Then grill them - omg so delicious! Everyone I serve it too loves it!

Zucchini recipes
Cut in half lengthwise. Brush with olive oil, sprinkle garlic, salt and pepper and grill on both sides until desired tenderness. It's easier to cut them after they are done into slices than to slice them and worry about turning 20 pieces. Sometimes I'll eat just a zucchini for dinner. If I have left overs, I chop it up and use it with eggs the next morning.

Fried zucchini with marinara for dipping
Brush with olive oil, salt and pepper and grill
Cut into rounds, saute with olive oil, onions and then mix in tomato sauce and pour over pasts

I agree with PP, skinnytaste has tons of recipes.
Some of my favs Grill it on BBQ, marinate in EVOO, salt and pepper Sauté in garlic and oil and serve over linguine ST stuffed zucchini boat with sausage Zucchini choco chip bread

Zucchini recipes
we have been just cutting it long either in half or quarters and grill for a few mins. Some times we add balsamic while grilling.
Skinny taste has a grated cheesy recipe that's awesome. sometimes i just cut it rounds and bake or grill them

Zucchini lasagna, south beach cheesy frittata has zucchini in it and super yummy. You can even make it the night before.

Made these zucchini boats last night, with organic ground chicken instead of turkey. Served over rice. Very tasty !
