Zucchini recipes
Anyone have any good recipes for zucchini? I just made zucchini muffins and we grill it. Trying to find some other ideas! TIA!

Zucchini boats! Slice in half long ways, scoop out and fill with whatever veggies you want add mozzerella and bread crumbs and bake. Ive used carrots, fresh corn, grape tomatoes, anything you like! With leftover zucchini, I just dice and sautee with tomato and chick peas top with shaved parm and basil.

I usually thinly slice the zucchini in half moon shapes and sautee in a pan with a little olive oil, salt and pepper, sliced onion and marinara sauce. So good! I will either eat it just as is, or over some pasta

I just prepped some baked zucchini sticks for tonight - cut into fry shape, dip in milk or egg and then in breadcrumbs and bake. I coated with 1/2 whole wheat breadcrumbs and 1/2 crushed Special K .

This is my favorite summer recipe to make!!!
Grilled Zucchini and Bean Salad
Total Time: 28 min.Prep20 min. Cook8 min. Yield:4 to 6 servings .Level:Easy
Ingredients 2 tablespoons fresh lime juice, from about 1 lime 2 tablespoons red wine vinegar 1/4 cup olive oil, plus more for brushing Salt and freshly ground black pepper 1/2 cup finely chopped red onion 1/4 cup chopped fresh cilantro 2 serrano chiles, stemmed, seeded and finely chopped 2 cloves garlic, minced 1 (15-ounce) can white kidney beans, rinsed and drained 1 (15-ounce) can red kidney beans, rinsed and drained 3 zucchini, cut lengthwise into 1/2-inch thick slices
Directions
Prepare a barbecue or grill pan to medium-high.
In a medium glass bowl, whisk the lime juice, vinegar and oil until slightly thickened. Season with salt and pepper. Add the red onions, cilantro, serrano chiles and garlic and toss gently until the vegetables are coated. Add the beans and stir to combine. Season with salt and pepper.
Brush the zucchinis on both sides with olive oil. Sprinkle with salt and pepper. Grill the zucchini on a lightly oiled grill rack until tender, turning over once, about 4 minutes per side. Cut the zucchini crosswise into 1-inch pieces. Add the zucchini to the bowl with the dressing and beans. Toss to combine and serve.

Zucchini Pie:
• 1 can of Pillsbury crescent rolls • 4 cups thinly sliced zucchini (unpeeled) • 2 cups shredded mozzarella • 1 cup thinly sliced onion (cut in half-ring shape) • 2 large eggs beaten • ½ cup fresh chopped parsley • ½ stick butter or margarine • 1 tsp dried Italian seasonings • ¼ tsp garlic powder • ½ tsp each of salt & pepper • 1 tsp mustard
In a pan sauté zucchini and onion in butter until tender. Then add parsley, Italian seasonings, garlic powder, s & p. Set aside to cool.
In a large bowl blend the eggs and the cheese. Add the veggie mixture to the eggs & cheese and mix well. **If there is a lot of liquid in the veggie mixture, drain most of it before adding to the egg mixture.
Line an ungreased baking dish or pie plate with the crescent rolls. Spread the dough with the tsp of mustard. Pour mixture on top. Bake in 375 degree oven 18-20 minutes or until the bottom is golden brown and mixture is set.
Here is a dish that I used to make quite frequently. The sauce in this dish is addictive!
Chicken with Zucchini and Tarragon:
• 4 chicken breasts on the bone (you could use boneless, but they tend to dry out and bone-in adds a lot of the flavor to the sauce) • 2 large zucchini sliced • 1 cup of cherry tomatoes (cut in half) • ½ stick of butter (melted) • Juice of one lemon • 2 tablespoons fresh chopped tarragon • Salt & pepper to taste
Layer the bottom of a roasting pan with the zucchini and cherry tomatoes. Place chicken breast on top and sprinkle with s & p. In a bowl combine the butter, lemon juice and tarragon. Pour on top of chicken. Place foil on top of pan and bake in 350 degree oven for about 45 minutes to an hour or until done.

I made a veggie lasagna with zucchini and fresh basil from my garden over the weekend.
I made it with a red sauce but I think next time, it would be better with a white.
I also make oven-fried for DH. This is his fave. I don't like eggs so I often dip in lite Italian dressing, then breadcrumbs and bake till it's crisp and golden.
I also do the zucchini marinara like the other ladies mentioned.
I want to try stuffed zucchini with ground meat.

Zucchini recipes
This is one of my favorite recipes by Bittman (writing of the NYTimes).. You don't need to be exact in the measurements either: Serves 4-6
Salt and pepper 1/4 cup extra virgin olive oil 1 lb. zucchini, rinsed and cut into 1/4 – 1/2-inch dice 1 tsp. minced garlic, or more to taste 1 lb. penne or other cut pasta 1 cup ricotta cheese 1 cup basil leaves, chopped 1/2 cup freshly grated Parmesan cheese Heat olive oil over a medium skillet, add zucchini, salt and pepper to taste. Cook until zucchini begins to brown then lower heat and continue cooking until tender (about 15 minutes). Two minutes before zucchini is done, add garlic.
While your pasta and zucchini are cooking, warm a serving bowl and put ricotta in it, along with half the basil. When the pasta is done cooking reserve at least 1 cup of the water, drain the pasta. Use as much of this liquid as necessary, a little at a time, to thin ricotta until it reaches a saucy consistency. Toss with pasta, zucchini, remaining basil and Parmesan. Taste and adjust seasoning.

This is a really easy Zucchini quiche recipe that my Mom makes all the time. It is delicious!!!
Crustless Zucchini Quiche
4 eggs 3 c. sliced zucchini 1 c. Bisquick 1/2 c. Parmesan-Reggiano cheese mix 3/4 block Mozzerella (cubed) 1 med. onion (chopped) 1 garlic clove (chopped) 1/2 c. oil Salt and pepper
Beat eggs first then mix everything all together. Grease quiche dish & pour in. Bake at 350 degrees for about 40 minutes. Delicious hot or cold!
