Roasted veggie help

So I have no clue what I'm doing wrong with my veggies. O want nicely roasted veggies that aren't a soggy mushy mess.

What I currently do:

Cut a variety of veggies (today was squash zucchini onion potato carrots and broccoli)
Coat with a bit of olive oil (maybe a tbsp?) and seasonings
Lay on tin foil on a cookie sheet
Bake at 450 (no roasting setting on my oven) for 20-25 minutes stirring once.

End result tastes fine but is mushy and not browned.

What am I doing wrong?

Not hot enough?
Too much oil? Not enough oil?
Not cooking long enough?

It could be the tin foil. I would place the veggies directly on the baking sheet and don't overcrowd. Overcrowding your veggies, could cause them to steam resulting in mushy veggies.

Ditch the tin foil and use just the pan, or the pan with parchment paper.

Make sure the vegetables aren't wet before you start cooking with them. If you washed them, dry them well with paper towels.

Don't overcrowd the pan, that sounded like a lot of vegetables, I would need at least 2 full pans for all of that. I usually do between 400 and 450 for 30-40 minutes.

Were they browned at all yet? Maybe it wasn't long enough. How often did you toss them? Maybe do that only once during the process.

I think it's the combination of veggies you are using. Zucchini has water in it so do onions and cook at different times than potatoes.
I cook cauliflower and broccoli together. Then I would do roots like carrots parsnips potatoes turnips on one tray. Do winter squash together. Zucchini on its own!
Also make sure you give a good coating of oil

I usually bake in a glass pyrex casserole dish at 400 degrees for 45 mins to 1 hour. My potatoes usually get browned around the edges.

Zucchini has a lot of water, so that roasts differently than broccoli. Carrots tend to take a while to roast.

If I roast a lot of veggies at once, I do them separately. This way I can take them out when each are done to my liking, without having to worry about burning or overcooking. The only thing I roast together are onions and peppers.

Don't overcrowd the pans either, because the veggies need space in order to brown properly.

I would say that 20-25 minutes is not long enough. I usually roast vegetables for 45-60 minutes (depending upon what I'm making).

Yeah I was gonna say - it takes more than 20 for me. Closer to an hour with my oven.

I find they do best in glass.
