I've been making cauliflower rice alot. Frozen from TJ and just sauté in a frying pan with alittle oil, salt, pepper and whatever seasonings you want Also TJ has frozen fire roasted peppers and onions that are sooooo good. I make them a lot too with steak or chicken

Favorite Side Dishes
We've been loving Bobby Flay's grilled sweet potato wedges lately.
Love sliced tomatoes and fresh mozzarella with a drizzle of balsamic and basil in summer.
I like doing a foil packet in the grill with broccoli, Yukon gold potatoes, garlic and seasonings. Add some fresh parm at the end. You can pretty much do the same with most summer veggies like squash, peppers, onions, etc.

Also with the foil packets, do you make sure it is low and long or do you just wrap it all up in a ball? I've had some trouble with foil packets not cooking correctly.

Trader Joe's Japanese Fried Rice is a favorite. We also make quinoa using chicken or veg broth.

sweet potato wedges
For the packets, it depends on the veggies. For potatoes and broccoli I cook maybe 20-25 minutes on low or medium low. Something like peppers and zucchini I would give less time over lower heat. Sometimes I put them on the high rack or just turn the burner off and cook over indirect heat.

Italian tomato salad: Juicy tomatoes, chopped salt oregano onion (just a little) basil let that sit to draw out the juices, then add EVOO
lots of good bread to soak up the juice. It's a summer staple in our home.
We also make boiled potatoes. Just boil potatoes with the skins on until a knife inserts easily. Drain and add to an ice bath, peel and coarsely break them up with a fork. Just add salt, pepper and wait for them to cool to room temp before drizzling with evoo
Steamed Italian flat beans with salt, pepper, and fresh garlic sauteed in evoo, toss.

Omg why you just wrote are staples in my parents house in the summer.
Some of our usual summer sides are....watermelon arugula salad with balsamic dressing, tomato salad with evoo and salt, fresh corn, grilled asparagus or , roasted sweet potatoes

Burnt broccoli or cauliflower super easy and delicious!!
spread on cookie sheet, drizzle olive oil, salt and pepper and bake 375/400 for about 20-30 mins depending on how burnt you like it
