Tomato and basil
So I have a TON of basil in my garden and a bunch of cherry tomatoes. Any good and easy recipe? I see a lot of recipes call for garlic. DO you always add fresh garlic in it?
Thanks

Re: Tomato and basil
Here are a few from my blog. You don't HAVE to use garlic but personally, I think garlic makes everything better!
Also, you can freeze your fresh basil too for later use. Pick the leaves off of the stems, clean them, dry them in between layers of clean paper towels and then freeze in a Ziploc bag. Whenever you need some fresh basil in a soup, sauce, etc just grab a frozen handful and toss it in.
You can also make pesto and then fill ice cubes trays with it and freeze. Coat the tops with a little bit of EVOO before freezing. Once they are frozen you can pop the pesto cubes out and toss them in a Ziploc. Defrost in seconds in the microwave.
