I had to make the serious eats version yesterday. It was so good. Took a little too long and was hard because I was making a few for my kids for lunch, but for me and DH, that's how I will make it! The kids can eat the easy version.
Yeah, the main guy on Serious Eats (J. Kenji Lopez Alt) is really good. His book is pretty good. He will try out recipes and then base them on science, for example using baking powder on fried chicken to make the skin extra crunchy. It works, though. I have not had a recipe by him fail me.
But you are right. It is time consuming at times. I might look at one of his recipes and just say forget it.

I love grilled cheese!!
My favorite is rye, cheddar, tomato and bacon
Second favorite is rye, mozzarella, turkey, avocado with mayo.
I only have used butter for the bread.
My kids love Nutella and fluff grilled cheese for dessert type thing.
Ohh and anyone who has to make a lot in short amount of time, it’s so easy to cook in the oven and they all come out awesome!

I make it for the kids all the time by melting butter in the pan and coating both sides of both slices while in the pan. Get the cheese ready (the kids like boars head yellow American) once I flip the buttery bread, I immediately put the cheese onto the hot part of the slice, then cap it with the warm side of the second slice of bread. I cook it medium low until it's golden brown on both sides.
Me, personally? I use unseeded rye with shredded double cheddar and a slice of American . Same process! Omg, so good!

I'm a fan of a good 'ole fashioned american cheese on white bread with butter in a frying pan.
But another favorite of mine is brie with sliced granny smith apples on sourdough bread.

I'm kind of the same. To me, grilled cheese is what i had as a kid- white bread and processed american cheese.
I love cheddar, but to me it doesn't taste the same when melted as the crappy american.
I am also funny with cheeses - anything to sharp or smelly and I'm out.

So I tried the butter. I did something different that I got from Serious Eats. I spread the butter on and toasted in the pan (no cheese) on one side. When that was toasted, I flipped them over and put the cheese on the toasted side and closed up the sandwich. I then put it back in the pan and did the other parts that were not grilled.
It was delicious and nice,buttery, and crispy.

I’ll experiment with mayo in a few days.
Ooo, I'm going to try this toasting method! I hate when the cheese isn't melted all the way but also hate when the bread gets too burnt on the outside.
