Grilled cheese
How do you make your grilled cheese sandwiches? I’ve been on a grilled cheese sandwich kick the last week because of a thread here, somewhere.
I usually just make it with whole wheat and Gouda in a panini press. However, I would like to add a bit more to it— perhaps butter or something else?
I have no access to American cheese and getting Cheddar is kind of a pain here; I can get it, but it’s annoying.
Share any special recipes you have!

Grilled cheese
I usually just butter one side of each piece of bread and fry it in a pan...rye is my favorite to use. There was a place at my old office where they served all types of diff grilled cheeses. My favorite had tomato bacon avocado and swiss on it.

Re: Grilled cheese
My DH thought I was nuts when he met me and I told him how my mom always made grilled cheese using mayo on the bread, instead of butter.
But it really does grill nicely with the oil and fat from the mayo.
He uses butter.
To me they both taste good
We fry it in a pan on the stove top
I love grilled cheese with ham. Yummmm

Re: Grilled cheese
I like the classic white bread with butter and American cheese made in a frying pan. Where when holding it to eat it leaves your fingers all greasy
I haven’t had one like this in years. Damn healthy food

Re: Grilled cheese
Buttered white or sourdough bread, american cheese in a frying pan. optional : - ham and thinly sliced pickles - thinly sliced tomato - bacon and tomato
I sometimes use shredded cheddar instead of american. DH likes his with swiss cheese.
Really indulgent, a thick bread like tuscan or country, rubbed with olive oil and a cut clove of garlic, fresh mozzarella and prosciutto.

Carmelize some onions. Add it to gruyere. I like rye, but any bread will do. Butter the bread. DEEEELISH!

I love that place! The one in Roosevelt Field was really good.
Thanks everyone! I’m going to give the mayo and butter suggestions a try and work my way up from there.

I never eat it myself, but I make it for my DD by buttering one side each of whole wheat bread and I use sharp cheddar cheese.

Butter, white bread, land o’lakes American cheese in a frying pan. Only way to do it, IMO. I haven’t had one in years!

Re: Grilled cheese
So I tried the butter. I did something different that I got from Serious Eats. I spread the butter on and toasted in the pan (no cheese) on one side. When that was toasted, I flipped them over and put the cheese on the toasted side and closed up the sandwich. I then put it back in the pan and did the other parts that were not grilled.
It was delicious and nice, buttery, and crispy.
Here’s a video of that technique: https://www.seriouseats.com/videos/techniques/how-to-make-a-better-grilled-cheese-5289990355001
I’ll experiment with mayo in a few days.

I am not a huge fan of Melt Shop bc they use liquid cheese
Grilled cheese is the one thing I can cook, lmao. We have it with butter, on wheat bread with different types of cheese, I like to do provolone and american.
Add bacon sometimes

Re: Grilled cheese
Mayo works so beautifully. My go to is mayo (once in a while I'll use butter), american cheese and white or potato bread. My favorite trick is to sprinkle a little garlic powder on the mayo side. Kind of like a garlic bread grilled cheese.

I’m eating a grilled cheese right now. I’ll take a bite for you.
I tried out the mayo. I prefer the butter Serious Eats method. The mayo burnt my bread.
For a PP, the pan does somewhat smoke for me, but I just lower the heat. I use a cast iron pan to make it.
I’m all out of cheese and bread.

Re: Grilled cheese
I had to make the serious eats version yesterday. It was so good. Took a little too long and was hard because I was making a few for my kids for lunch, but for me and DH, that's how I will make it! The kids can eat the easy version.
