If you’re set on a specific hotel, room type and dates I would book it now. Then when the promos come out you can apply it to your booking. December is a busy month though with the holidays plus Star Wars is opening so I wouldn’t hold my breath for a discount.
I would make sure you know what parks you’re going to on what days ahead of the 180 day mark when you can make your dining reservations for the length of your trip.

i would go ahead and book now-- its only a $200 deposit to book, and then you have time to make payments or cancel. you can make sit-down meal reservations at 6 months (180 days) before you leave so i usually try to book a little bit before that 'mark", so that I'm ready to make my meal reservations. it sounds crazy... but especially in December, you want to make sure you have some sit-down meals/ character meals booked ahead if you want to do them. you can definitely just do "quick service" the whole time and theres a lot of great options.... but theres also a bunch of really fun sit-down places that you need reservations for... and doing sit-down meals makes a nice little break, too.

I booked our trip for the first week of December about 2 weeks ago. It's only a $200 deposit and you can make changes or cancel up to 30 days before your reservation date with no penalty. I wanted a specific room type, so I figured it was best to book now and make sure we can secure the room type and dates.
