Vegan Dinner recipes
I need some vegan suggestions that aren't too carb-heavy. New medical research (and my Neuro) suggest eating no meat or dairy to reduce inflamation (fish is fine)
So here I am, vegan for the past month or so. I really feel awesome, and I want to keep feeling great. The thought of chicken and meat really gross me out, especially pork
I am not a big fan of curry. Other than that, I am up for anything. Suggestions?

Vegan Dinner recipes

We also do a chopped salad fairly often. I usually do spinach or whatever lettuce I have with red pepper, cucumber, red onion, pepperoncini, and crispy chickpeas with an Italian vinaigrette.

two of my favorites:
chana masala... yes, it's indian, but it's not curry. it's stewed chickpea. i would make it with white rice and a salad.
this one does have pasta, but oh so good. QUICK AND SPICY TOMATO SOUP
it's giada de laurentiis's quick and spicy tomato soup. i would make it with vegetable broth instead of chicken broth.
i'm cuban/dominican... we love rice and beans!! can never go wrong with rice and beans.
i would check out Forks Over Knives recipes. they always have good ideas.

Vegan Dinner recipes
I, too, recently went Whole Food, Plant Based for health reasons. Started around Jan 15th. I am feeling great and have lost some weight too! I only ever ate chicken, turkey & fish- no red meat or pork, so it wasn't that bad of a change. Dropping dairy & eggs was harder, but haven't had any and I see huge differences in the way I feel.
Anyway-- I pin a ton of recipes, but try to keep it simple and real food. I like tofu- but it needs to be pressed- I use that as my main protein. I also like tempeh. They both take whatever seasonings you use, so versatile! I've made: brussel sprout tacos, tempeh tacos-- just add the seasoning to them. I also made portabella fajitas. I mash chickpeas & avocados together (keeping big chunks though), salt, pepper & use like tuna salad. I make a lot of tofu scrambles with veggies. Quinoa is great and I make a lot of salads with it. I also have fun with salads, mixing in veggies, olives, nuts- whatever I'm in the mood for. Breakfast is always overnight oatmeal with almond milk, mix in banana or berries & nuts. Forks over knives is great. Straight up food- recipe book is great too.

im vegan at heart, i can't seem to give up the cheese. eggs i have once a month, i seem to crave them; might be me feeling a need for a protein boost at that time.
all these are great, keep us posted on your progress!
when i went veg 12 years ago i lost 20 lbs after reading Skinny *****. I wasn't intending to lose but it was a pleasant side effect! My labs are great, but i need a B12 supplement daily. I also use nutritional yeast to supplement.

I have never felt better in my whole life! I'm doing great. I don't crave meat in any way shape or form. Ice cream is the only thing I wish I had, but I got the Ben & Jerry's and it is delicious! It's very fattening though I don't eat bread or rice, and I am totally satisfied. I grilled Tofu on Thursday night and added it to a stir fry of peas, mushrooms and onions in a wine & "vegan butter" sauce. It was amazing!
I went to a school function last night, and the only thing I could eat was salad. Luckily, I brought a little container of hummus and a little baggie of almonds. It was fine! My newest obession is a Kim's pop with almond butter and bananas, sprinkled with chia and flaxseeds! YUM

good for you!!! I don't eat much red meat, mostly chicken. I am a bread eater though and wish I can go vegan again. I did it years ago but have trouble figuring out what to eat.

This is great-- I am feeling so good too. People who don't know I've made the change and hadn't seen me in a while,kept telling me I look and seem different- my skin, my energy/attitude. It's nice. When I go out to eat, it's difficult. I can basically either have pasta or fish. Depending on how I feel, I do sometimes have fish- because I feel healthier with that than pasta usually. I ahaven't tried the Kim's pops, but do brown rice cakes with almond butter, banana and seeds too! Even my DD is eating it LOL Have you roasted chickpeas? That's another great snack.
