Buddha Bowls - basically roasted sweet potatoes, kale, broccolini and seasoned chickpeas in a tahini dressing. so filling and so delicious
Veggie Fajitas - peppers, onions, mushrooms, etc. stir fried or grilled and then top on soft tortillas with cheese, guacamole, salsa. yum
penne alla vodka
ravioli & sauce
eggplant parm
Cheese and Fruit platters
Vegetable Soup
My favorite italian salad - mix of lettuces but heavy on iceburg, shredded mozz., cucumbers, green peppers, olives, steamed broccoli, marinated mushrooms in an italian dressing.
Quiche - pie crust, eggs mixed with anything... peppers and onions, cheese and swiss chard, kale and tomatoes, any combo works!!! You can also do crustless quiche without the crust.

Vegetarian meals
Salad with red onion, red peppers, cucumber, pepperoncini, feta, and crispy garlic chickpeas. We eat this at least twice a month. Roasted sweet potato and black bean tacos with salsa and guac Veggie fried rice Red Thai curry with chickpeas Black beans and rice Refried bean burritos Ravioli or Tortellini Eggplant Parm Veggie Quinoa soup Mexican Quinoa stew Salad with falafel and tzaziki Rice bowls with chickpeas, veggies and BBQ sauce

i soak beans overnight and cook rice + beans, i have it all week and add sauteed veggies
lentil shepherd's pie potato pancakes/veggie pancakes soups baked ziti pierogi ravioli oatmeal quinoa/couscous and hummus + sauteed veg pita + hummus falafel

These all sound great. I made shakshouka recently. That was good. Definitely going to try the Mexican quinoa stew. Potato/corn chowder sounds great also. I am also trying to reduce the card intake a bit. I like southwest scrambled tofu

Lentil and black bean tacos Roasted root vegetables with swiss chard "pie" Grilled tofu seasoned to taste like hot sausage, I add it to peppers and onions for "sausage and peppers' Stuffed acorn squash with wild rice or quinoa and veggies stuffed eggplant or zucchini zoodles with different style sauces I love creating all kinds of cold salads with beans, chickpeas and nuts and fruit
I don't like meat substitutes at all. No facon or beyond meat for me, but I did try an impossible burger just once, and I loved it.

Vegetarian meals
I do a plant-based diet (about 90%, as I do still have fish/seafood 1 or 2 times a week). No meat, dairy/eggs though. I enjoy all different tofu scrambles (spinach, cherry tomatoes & mushrooms being my favorite). I like stuffed portabello mushrooms on the grill (saute greens - like spinach, kale, broccolini & onions and tomatoes) stuff the mushroom and grill. cauliflower rice and beans lots of yummy salad- with or without greens. grain bowls- quinoa, greens, beans, veggies I don't eat meat substitutes, but do enjoy veggie and bean burgers

i love impossible burger too! did you try the whopper at burger king! mmm and i hate fast food lol but i've eaten it twice and would again.
i don't do the soy based stuff but i do like dr pragers perfect burger too!

the only thing that i've made that i didn't see on the list is chana masala. it's indian stewed chickpeas. i love it over white rice. i think it's best the next day.
