17 meals - 1 roast chicken!

I posted about trying this on the weekly menu thread and thought I'd share the link:

It's amazing how far 1 roast chicken can go! Ours was 7.5 lbs.

Monday - made the roast chicken as instructed with carrots and potatoes. Still have carrots and potatoes leftover! DH and I each had healthy dinner servings, but I didn't use any for leftovers for lunch.

Tuesday - Made the chicken picadillo and jasmine rice. Really good. We both had healthy dinner servings and DH took leftovers for lunch with taco shells.

Wednesday - made the chicken with sesame noodles - this makes a HEALTHY amount of food! We both had good dinner servings and both had lunch the next day. We still have probably 1 serving of leftovers.

Thursday - Made the white chicken chilli - I ended up using the rest of the chicken because I was afraid to save it to use until Saturday since we have plans out tonight. Chilli was really tasty and there is a little bit leftover, but not quite enough for a good lunch.

Had I used the appropriate amount of chicken in the chilli I surely would have had enough for the curry.

I was skeptical because DH and I are healthy eaters, but this made me realize maybe our serving sizes are too big and this helps with that portion control. I'm definitely going to try it again!

ETA: The blogger gave herself a $25 budget for her meals for the week!! Granted, there is an expectation that you have some items in your pantry and staples to use.

I definitely wouldn't use leftovers that old, maybe a day or 2 but beyond that I would not...
