Leftover Roast Chicken
I'm looking for ideas for leftover roasted chicken. I usually do chili but my freezer is already stocked with that. I thought about quesadillas but I don't have all the fixings. I was hoping for some new ideas that would use what I have in the pantry. Thanks!

make a big salad with whatever you have on hand and top with the leftover chicken (sliced or shredded).
you can make a pasta with broccoli in a sauce of garlic, oil & red pepper flakes and add pieces of the chicken.

do you have bbq sauce? maybe make a little bbq chicken. i was at costco and they had canned chicken mixed with some hot sauce and mayo. it tasted pretty good. also what about chicken croquettes or pizza bagels w/ chicken. chicken pot pie.

I also love going to Allrecipes.com and going on the tab called "ingredients". it lets me type in the ingredients i have on hand and offers some recipe ideas that use those ingredients

Great ideas! I'm thinking some kind of pizza. Either with bbq sauce or tomatoes and balsamic.

I usually make a chicken pot pie , or I will take the leftover on salads as lunch. Or I will make chicken salad with mayo for sandwiches
