Allergy moms of egg and dairy Here are recipes for pancakes and muffins

I have become quite the betty crocker since my youngest has so many allergies... here are the recipes

Home-Style Pancakes


Ingredients:
2 cups flour
4 tsp baking powder
½ tsp salt
2 T sugar
2 cups water
3 T oil
¼ tsp vanilla extract

Sift dry ingredients together; *** remaining ingredients and beat together. Pour the batter to form circles approximately 4 inches in diameter onto a hot, lightly greased griddle or heavy skillet. Cook for 2 to 3 minutes or until the pancakes have a bubbly surface and slightly dry edges. Flip pancakes and cook for 2 more minutes or until golden.

This batter can be used to make waffles



Muffin


1 cup of flour
¼ tsp of cinnamon (optional)
½ cup juice-pear
¼ tsp salt
1 tsp baking powder
2 equivalents of egg replacer (mix 1 ½ tsp egg replacer plus 2 tbsp of water) then add in the same container (mix 1 tsp baking powder plus 1 ½ tbsp corn oil and 1 ½ tbsp of water). Use a whisk to mix all ingredients thoroughly.
½ cup sugar
½ tsp vanilla
½ cup apple sauce or other fruit puree
¼ cup corn oil

1- Combine dry ingredients; set aside.
2- Mix together wet ingredients. Gradually add the liquids to the dry ingredients. Stir until just blended- about 20 strokes.
4- Preheat oven to 350. Bake for 35 to 40 minutes or until golden brown and firm to the touch.
5- Yields 6 muffins.
