Alternative ways you make your fave (bad) foods
I made eggplant "pizzas" earlier.
I liked it, DH said WHERE'S THE CARBS I'M GONNA STARVE!!!!!
(Honestly it was really filling because I used ricotta and shredded mozzarella).
Anyways, what are some things that you make to be healthier.
I also liked the ideas from the lower carb thread the other day and am going to try them too.

Lettuce tacos
Get those giant romaine leaves and fill them with beef (or chicken...or even go vegan and just use brown rice or veggies or etc)
for ice cream - freeze bananas and blend them with a little cold water to make an "ice cream"
Veggie lasagna - you can use strips of zucchini and instead of ricotta you use pine nuts ground up with lemon juice and fresh basil

I do the lettuce wrap instead of tortillas as well or just use one tortilla on the bottom and pile on tons of lettuce, shredded chicken, a small amount of low fat sour cream and salsa for a healthy mexican pizza type dinner.
LOVE spaghetti squash in place of pasta. I just add sauce and cheese like I would with pasta or even add ricotta.
Healthier pizza- I put sauce, lf mozzarella and a few slices of turkey pepperoni and bake until melty and crispy. Love them.
I've put chicken breast in the crockpot and basically cooked it in some homemade sauce then topped with mozzarella just before serving for a lighter chicken parm.

skinnytaste.com has awesome, healthier ways to make some of your favorite 'bad' foods. Taco dip, wings, etc. and lots of other delicious meals. I usually make 3-4 of her recipes a week.

back when i used to eat meat, this is something similar to what i would do.
cut three small-ish potatoes in half. put them with the cut side down in your crock pot... this keeps the chicken from touching the bottom and sometimes burning.
then put in a few skin-less chicken breasts and then cover the whole thing with your favorite can/bottled salsa. put on low and walk away.
chicken is very juicy and just falls apart.
