Any vegetarians out there? Need help with party planning.
My friend, who is a vegetarian, is coming for my NYE party. She's not a vegan - she just doesn't eat meat or fish. Any suggestions for what I can put on the menu for her besides pasta? I know she complains that she gets bored with her options so I want her to have something fun too. TIA!

I'm always a big fan of baked ziti or eggplant parmesan. Maybe veggie lasagna?
I have a friend who makes vegetarian pigs in a blanket and they are SOOO good. She wraps the pillsbury croissant dough around veggie hotdogs.

You should be able to get them at any supermarket - whole foods should carry them.

and some of the independently owned natural or organic store carry them.
