I had found this one on the food network website, but can't find the official one... here is how it goes from what I remember...
In pot: 1 1/2 cups cream few tbs butter 3 cloves garlic, chopped could sprig of thyme (leave intact)
warm and let simmer for a few minutes until flavors mix. take out thyme sprigs.
slice about 4 or 5 potatoes on a mandolin, very thin.
spray baking dish, layer potatoes, pour some of cream mixture, spinkle with black pepper, sprinkle with grated parm or pecorino romano, repeat fr 3 or 4 layers. bake in oven for about 40-50 minutes until desired browness!

This is my mom's recipe and the best!! It is a bit scattered, I tried to have it make sense...
Make the sauce before cooking the potatoes; it can be made ahead of time and refrigerated. Reheat it in a Pyrex-type cup or bowl on 80 % until runny. Make a medium white sauce: 2 Tb. margarine (butter?) (I use Imperial sticks.) 2 Tb. flour 1 cup milk Chunk of Velveeta I make it in the microwave in a large see-through Pyrex measuring cup, as it will bubble up and boil over. You can make it in a saucepan on the stove, but you must stand there and stir. Melt the butter, add the flour and try to mix it to make a paste consistency. Add the milk a little at a time and whisk it into the margarine/flour paste. I let it cook on HI for about a minute, then 30 seconds until the mixture starts to boil. It should boil for a minute before it's done. Then I add enough cheese to make the sauce yellow. I cut it up into cubes, heat it on 80% for a minute, then let it sit a couple of minutes before stirring. You would do the same in a saucepan except stir constantly until it boils, then let it boil 1 minute. That is enough sauce for my blue Pyrex casserole with the lid. If you need to make a bigger casserole, you would need to double or use 3 tb. and 1 1/2 c. for the sauce. Peel and slice the potatoes (6 big ones??), cook in water until the water is hot and starting to boil. Drain and add to the sauce. Bake in a greased casserole dish at 350 for 20-30 minutes. I usually start with the lid on, then take it off if the sauce bubbles up, then put it back on. It will depend on how much sauce you have.

I use this one - it's more like an au gratin, but still delicious:
Au Gratin Potatoes 1 spray(s) cooking spray 1 Tbsp butter 1 medium onion(s), thinly sliced 2 Tbsp all-purpose flour 2 cup(s) fat-free skim milk 2 pound(s) Yukon Gold potato(es), thinly sliced 1 cup(s) low-fat shredded cheddar cheese 1 tsp table salt 1/4 tsp black pepper Instructions
* Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.
* Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper.
* Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.
* Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.
