Anyone have a REALLY good potato salad recipe?
Going to a friend's house Sunday and they are BBQing and we are bringing the sides.

i hate it with mayo. we make it with vinegar
boil potatoes ad peel cut up cucumbers and red onion salt pepper olive oil and vinegar. refrigerate so it is chilled
its more like a reg salad swapping lettuce with potatoes

this is an eastern european recipe, it's a spin on potato salad, my husband who hates my ethnic cooking loooves this
potatoes (boil) hard bolied eggs pickles onions cans of peas and carrots mixed together
chop everything well into small tinycubes
mayo and some sour cream
salt and pepper
It sounds gross but it's sooooooo good...definitely not low fat though..

15 Baby Red Potatoes, Quartered Mayo (to Taste) 3 Scallions, Chopped 5 Eggs, Hardboiled and Sliced Salt & Pepper (to taste)
Boil potatoes and let cool. Mix in Scallions, Eggs, Salt, Pepper and Mayo. Let sit for a few hours to overnight.
It's soooo good.

Rachel Ray's Loaded Baked Potato Salad is the bomb. It's so fatty but sooooooo delicious.
***I only used 1 lb bacon
7 pounds baking potatoes Extra-virgin olive oil, for brushing 2 pounds bacon, cut crosswise into 1-inch pieces 2 sticks (1/2 pound) butter, softened 2 pints sour cream Salt and pepper 1 bunch scallions, thinly sliced 1 pound cheddar cheese, shredded
Preheat the oven to 400°. Pierce the potatoes with a fork; brush with oil. Bake until tender, 1 hour. Let cool, then cut into bite-size pieces.
In a skillet, cook the bacon until crisp, about 10 minutes. Drain.
In a large bowl, combine the butter and sour cream; season with salt and pepper. Stir in the potatoes, bacon, scallions and cheese. Serve at room temperature.

2 lb small red or white potatoes 1 kg 1 cup HELLMANN'S® Real, Light or Ultra Low Fat Mayonnaise 250 mL 2 tbsp HELLMANN'S® DIJONNAISE Creamy Mustard 30 mL 2 tbsp chopped fresh dill or parsley 30 mL 2 tbsp white vinegar 30 mL 1/2 tsp salt 2 mL 1/4 tsp pepper 1 mL 1 cup chopped celery 250 mL 1/2 cup chopped green onions 125 mL Preparation Instructions 1) Cook potatoes in boiling salted water 15 minutes or until tender. 2) Drain well, cool and cut into quarters. 3) In large bowl combine mayonnaise, Dijonnaise, dill, vinegar, salt and pepper. 4) Stir in potatoes, celery and onion. 5) Cover and chill 1 hour to blend flavours.
I love this one from Hellmans. I leave the skin on the red potatoes. I don't bother with the Dijonnaise. I just use regular Dijon mustard. In a pinch even Gouldens is fine. Sometimes I use diced red onion instead of scallions. This dressing is great on Chicken or Shrimp Salad too.

-About 3 lbs. small red potatoes, cut or quarted after boiling - leave skins on -One onion chopped (I use red) -2 shallots chopped -4-5 slices bacon crumbled -2-3 hard boiled eggs crumbled -Mayo -1-2 TSP of Dijon mustard -Salt & pepper to taste

I use this recipe too...we call it "salad olivier" I also add a touch of mustard for some tang.
Its is very good!
